Pearl barley porridge
A hearty, chewy wholegrain porridge that works sweet or savoury.

Ingredients
- 200 g pearl barley
- 700 ml water or milk
- 1 pinch salt
- Butter, honey or jam to serve
Method
- Rinse the barley, then add it to the liquid with the salt.
- Bring to a boil and simmer on low, stirring occasionally, until soft and creamy, about 30–35 minutes.
- Add a splash more liquid if it thickens too fast, then serve with butter and honey, or savoury with cheese.
Good to know
Barley is rich in beta-glucan, a soluble fibre linked to lower cholesterol.
