Toasted buckwheat (tatar)

Ingredients
- 200 g buckwheat groats
- 400 ml water
- 1 pinch salt
- Butter or oil, to serve
Method
- Rinse the groats, then toast them dry in the pan for a minute or two until fragrant.
- Add the water and salt, bring to a boil, cover and simmer on low until the water is absorbed, about 15 minutes.
- Rest, covered, for 5 minutes, then fluff and stir in a little butter or oil.
Good to know
Buckwheat is naturally gluten-free and a fairly complete plant protein. Great under stews or with a fried egg.
