Baked cod with potatoes
A lean one-tray fish dinner — white fish, potatoes and lemon.

Ingredients
- 600 g cod or other white fish fillet
- 700 g potatoes, thinly sliced
- 2 tbsp olive oil
- 1 lemon, garlic and dill
- Salt and pepper
Method
- Toss the potato slices with oil, salt and pepper and roast at 200°C for about 20 minutes until starting to soften.
- Lay the cod on top, add lemon slices, garlic and dill, and drizzle with a little more oil.
- Return to the oven for 12–15 minutes, until the fish flakes and reaches a safe internal temperature.
- Rest briefly and serve with a green salad.
Good to know
Cod is very lean and high in protein. Cook fish to an internal temperature of about 63°C.
