Ingredients

Method

  1. Toss the potato slices with oil, salt and pepper and roast at 200°C for about 20 minutes until starting to soften.
  2. Lay the cod on top, add lemon slices, garlic and dill, and drizzle with a little more oil.
  3. Return to the oven for 12–15 minutes, until the fish flakes and reaches a safe internal temperature.
  4. Rest briefly and serve with a green salad.

Good to know

Cod is very lean and high in protein. Cook fish to an internal temperature of about 63°C.
