  1. Rinse the groats, then toast them dry in the pan for a minute or two until fragrant.
  2. Add the water and salt, bring to a boil, cover and simmer on low until the water is absorbed, about 15 minutes.
  3. Rest, covered, for 5 minutes, then fluff and stir in a little butter or oil.

Buckwheat is naturally gluten-free and a fairly complete plant protein. Great under stews or with a fried egg.
