Ingredients

Method

  1. Soften the chopped onion, carrot and garlic in a little oil.
  2. Stir in the tomato paste and cumin for a minute.
  3. Add the lentils and stock, bring to a boil and simmer until the lentils collapse and thicken the soup, about 15 minutes.
  4. Season, add a squeeze of lemon and serve.

Good to know

Red lentils are inexpensive, high in protein and fibre, and cook without soaking.
